okay so i had a bunch of refrigerator-pickled sweet bell peppers (i had eaten all the cucumbers)
i just filled a jar up with white vinegar, minced garlic, a ton of sugar, cukes, peppers, & shallots. it says they last 2 months, i made them like 2 weeks ago and that is as long as they made it
it is too hot for me out (not alabama hot i am sure) but i just wanted like cold asian noodles.
i started with boiling, salting, & adding oil to the water. bring to boil then add noodles.
then i thin-sliced the peppers & minced the shallots.
then i raided the spice rack / sauce bucket... i found:
spices:
freeze-dried chives (idk)
red pepper flakes
ground ginger
sauces:
garlic chili paste
stir-fry sauce
garlic
for later:
sriracha
soy sauce
(my apartment has been collecting random spices, sauces, kitchen utensils due to the high turnover of roommates...it has been great for my cooking!)
i heated the garlic up in oil, added chili-garlic paste & stir-fry sauce (i don't even know what that is but tasted 'stir-fry-y')
i added the ginger, chives, & pepper flakes.
then i added the noodles and let them sit there for a while.
(i like my noodles on the under-done end)
once it all looked combined i put noodles in a container, added peppers & shallots, and put in the fridge.
it is really hard to wait for them to cool but I SHALL OVERCOME.
i will probably add a dash of soy & some sriracha depending on how hot it already is!!! (it does not need sriracha but i'll def do a splash of soy)
things i wish i had:
seasame seeds & chiffonaded greens for class
chop sticks
cute dishes
better camera / photog. skills
(i was going to serve it in a tea cup which sounded cute but it was definitely stupid looking)
((i did try to wipe the sides of my bowl though))
